Celebrity Chef Raves About Buffalo

Saturday, April 13th, 2002, celebrity Chef Bobby Flay joined host Mary Elaine on the hit TV show "Food Nation." Bobby has gained recognition at his Mesa Grill for his mouthwatering dishes and has built his reputation as a major force not only in New York's culinary scene but also nation-wide.

Adding to his list of accomplishments, Bobby is the host of the Food Networks "Hot Off the Grill with Bobby Flay." He enjoys putting a new and colorful twist on southwestern cuisine. He's determined to fully explore the possibilities of south-western cuisine as an important and distinct culinary style for America. Part of that determination is generated by Buffalo meat. Bobby is totally hooked on bison meat. He claims he has witnessed overwhelming success with his customers but feels that people on the east coast have been slow to take up this wonderful food. He believes it's only a matter of time before everyone in America eats buffalo. It is the fastest growing menu item in his restaurant and expects that it will be featured in many restaurants eventually all over North America.
