Buffalo meat has been rumored to be low in fat and ideal for a healthy circulatory system. Now you can put any suspect of rumor to rest and know it is true. There are 2 major families of fatty acid chains in nature.  Omega 6 found in seeds of plants, and Omega 3 found only in green leaves (it is made in choroplast). Healthy cultures sustain around a 4 : 1 ratio between Omega 6 and Omega 3. The average American diet maintains an average of 14-20 : 1 ration. It is this imbalance that has sent the rate of chronic degenerative disease in adults soaring in the U.S. 

Jo Robinson, nutrition researcher and author said grain-fed animals have approximately one-tenth the Omega 3 fatty acid as grass-fed animals and one-fifth the amount of conjugated linoleic acid or CLA. 

"Instead of promoting tumor growth as linoleic acid does, CLA blocks it. Instead of promoting obesity it reduces it. Rather than enhancing the risk of diabetes it blocks it. It stimulates the immune system. We didn't even know it existed until 1987. Now we are finding out CLA just about cures all that ails us," quotes Robinson. CLA is found in body fat and milk or ruminant animals. It is highest in those who direct graze green grass. Grass-fed fat has been described as oily and soft. This soft fat is absolutely better for you because it is not saturated fat. It is higher in Omega 3's and lower in Omega 6's and that's the ticket to good health.
