Appetizer Bison Meatballs

Meatballs with a rich apple currant sauce.

Ingredients

  • 2 pounds (900 g) ground Bison (Bison) Meat 
  • 2 eggs slightly beaten 
  • 1 cup (250 ml) shredded mozzarella cheese 
  • 1/2 cup (125 ml) dry bread crumbs 
  • 1/4 cup (60 ml) chopped onion 
  • 2 tbsp (30 ml) grated Parmesan cheese 
  • 1 tbsp (15 ml) ketchup 
  • 2 tsp (10 ml) Worcestershire sauce 
  • 1 tsp (5 ml) Italian seasoning 
  • 1 tsp (5 ml) basil 
  • 1/2 tsp (2 ml) pepper 

Method

  1. In a bowl, combine above ingredients. 
  2. Shape into 1-in (2.5 cm) meatballs. Place on a rack in a shallow roasting pan and bake at 350° (180°C) for 10-15 minutes. 
  3. Remove the meatballs and rack. 
  4. Sauce: 2 cups (500 ml) ketchup 2 tbsp (30 ml) cornstarch 12 oz (370 ml) apple jelly 12 oz (370 ml) currant jelly
  5. Combine ketchup and cornstarch in the roasting pan. Stir in jellies. Add the meatballs. 
  6. Cover and bake 20-30 minutes. Yield: about 8 dozen.
