Cajun Style Bison Chili

This delicious chili was featured at the Edmonton's Women's Show in October 2002.

Ingredients

  • 2.5 lbs. ground bison 
  • 1 lb bison sausage 
  • 1 large onion 
  • 2 Tbsp. vegetable oil 
  • salt & pepper to taste 
  • 3 garlic cloves 
  • 2 Tbsp. diced green chiles 
  • 8 oz. tomatoe sauce 
  • 1 bouillon cube 
  • 1 1/4 cup water 
  • 6 Tbsp. chili powder 
  • 1 1/2 Tbsp. chili powder 
  • 1 1/2 Tbsp. ground cumin 
  • 3 Tbsp. cajun spice 
  • 1/8 Tbsp. dry mustard 
  • 1/8 Tbsp. brown sugar 
  • pinch of oregano 

Method 

  1. In a large kettle brown the ground bison and sausage with chopped onion oil. 
  2. Add salt and pepper to taste. 
  3. Add remaining ingredients. Stir well, cover and simmer 3-4 hours until chili is thick and bubbly. Stir occasionally.
  4. Feel free to add in your favorite kind of beans (pinto, kidney, garbanzo). Follow soaking and cooking directions on bag. Add in while simmering chili.
