Double Stuffed Bison Meat Loaf
Mouthwatering meatloaf featured at the Edmonton Women's Show in 2002.
Meat Loaf Ingredients
- 5 kg ground bison
- 500 ml finely chopped carrots
- 500 ml finely chopped celery
- 500 ml finely chopped onions
- 3 Tbsp minced garlic
- 6 eggs
- 250 ml milk
- 500 ml panko or dry bread crumbs
- 3 Tbsp steak spice
- 3 Tbsp chili powder
- 2 Tbsp oregano
- 2 Tbsp basil
- 2 Tbsp black pepper
- 4 Tbsp Salt
Stuffing Ingredients
- 250 g Swiss cheese
- 250 g Provolone cheese
Method
- Mix all meat loaf ingredients together and mix well with your hands.
- Using two strips of cellophane laid out on your prep table spread half of the recipe onto each strip. Cover the meat mixtures with cheese and use the end of the cellophane to roll up like a jellyroll. Be sure to secure ends so to reduce the cheese from leaking out.
- Transfer onto a baking sheet and bake at 350 degrees for 40-50 minutes. Take out of oven to cool checking to make sure the meat loaf is fully cooked.
- Assembly & Presentation: Slice servings at least two inches thick and serve with garlic mashed potatoes, mushroom gravy and choice of vegetables or salad.
