Bison Tartare

Quantity Ingredients Yield: 4 Portions
- 350 g 12 oz. Bison, chopped fine
- 15 ml 1 tbsp. Shallots, chopped fine
- 30 ml 2 tbsp. Balsamic vinegar
- 15 ml 1 tbsp. Fresh sage, chopped
- 15 ml 1 tbsp. Fresh chives, chopped
- Salt and pepper to taste.
Preparation Method:
- Mix all ingredients together until just combined. (Do not over mix).
- Chill and form into desired shapes.
- Arrange on plate with assorted leaf lettuces. Garnish with whole fresh herbs.
