Bison Roast

A delicious way to prepare your next Roast Bison.


  • 3-4 Ib. Bison Roast
  • 2 cloves Garlic, crushed
  • 1 Bay Leaf
  • 1 cup Orange Juice
  • 1 slice Bacon, cut into small pieces
  • Salt and Pepper
  • 2 Cloves


  1. Cut slits in meat and insert small pieces of bacon and garlic. 
  2. Salt and pepper well. 
  3. Sear meat on all sides. 
  4. Put meat in roaster and place bay leaf and cloves on top. 
  5. Baste with orange juice. 
  6. Roast in 325°F oven, 25 minutes for each pound or to internal temperature of 155-160°F, (for medium) basting frequently with orange juice. 6-8 Servings
