Cajun Style Bison Chili
This delicious chili was featured at the Edmonton's Women's Show in October 2002.
Ingredients
- 2.5 lbs. ground bison
- 1 lb bison sausage
- 1 large onion
- 2 Tbsp. vegetable oil
- salt & pepper to taste
- 3 garlic cloves
- 2 Tbsp. diced green chiles
- 8 oz. tomatoe sauce
- 1 bouillon cube
- 1 1/4 cup water
- 6 Tbsp. chili powder
- 1 1/2 Tbsp. chili powder
- 1 1/2 Tbsp. ground cumin
- 3 Tbsp. cajun spice
- 1/8 Tbsp. dry mustard
- 1/8 Tbsp. brown sugar
- pinch of oregano
Method
- In a large kettle brown the ground bison and sausage with chopped onion oil.
- Add salt and pepper to taste.
- Add remaining ingredients. Stir well, cover and simmer 3-4 hours until chili is thick and bubbly. Stir occasionally.
- Feel free to add in your favorite kind of beans (pinto, kidney, garbanzo). Follow soaking and cooking directions on bag. Add in while simmering chili.
