Mountie Chili

Ingredients
- 1 lbs (454 grams) ground lean bison
- 1 cup (250 ml) or one large chopped onion
- 2 cloves garlic, minced
- 1 cup (250ml) chopped bell pepper
- 2-3 tbsp (30-45 ml) chili powder
- 2 tsp (10 ml) cocoa powder
- 2 tsp (10 ml) of salt
- 1 tsp (5 ml) dried leaf oregano, crushed
- 1 tsp (5 ml) ground cinnamon
- 1 tsp (5 ml) ground cumin
- ½ tsp (2 ml) ground black pepper
- ¼ tsp (1ml) ground allspice
- 2 large diced tomatoes
- 16 oz. can (470 m) of tomato sauce
- 15 oz. (430 grams) pre-cooked pinto beans
- 15 oz. (430 grams) pre-cooked white or black beans
- 1-cup (250 ml) water
- 7 oz. (210 ml) or one small diced green chili
Condiments: shredded cheese, chopped green onion, sliced black olives, sour cream, cooked tortilla chips
Method
- Coat the surface of large pan with non-stick cooking spray or oil. Sauté bison for 3 minutes; stirring to crumble.
- Add onion and garlic, saute 5 additional minutes.
- Mix in bell pepper, chili powder, coca powder, salt, oregano, cinnamon, cumin, black pepper, allspice and cook 2 minutes.
- Add tomatoes, tomato sauce, beans, water and chili. Stir to blend and simmer for 45-60 minutes.
- Serve with condiments if desired.
