My Big Fat Bison Pita
A tasty bison pita recipe drizzled with a spicy yogurt mix.
Ingredients
Bison Patties:
- 1 lb lean ground bison meat
- 1 tbsp each chopped fresh rosemary, oregano, mint, cilantro and basil
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tbsp fresh, minced garlic
- 2 tsp Dijon mustard
- 1 egg
- 1/2 cup dried breadcrumbs
- Salt Black pepper
Method
- Mix all ingredients together and form into 5 oz patties.
- Grill on BBQ until well done.
Spiced Yogurt:
- 1/2 cup plain yogurt
- 1/2 tsp chopped cilantro
- 1/4 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1/4 tsp minced fresh garlic
- Salt Black pepper
Method
- Mix all ingredients together.
Roasted Red Pepper Hummus:
- 1 cup cooked chickpeas
- 1 roasted red pepper
- 1 tsp garlic
- 1 tbsp chopped parsley
- 1 tbsp fresh lemon juice
- 1 tbsp tahini
- Salt and pepper to taste
Method
- Process all ingredients in a food processor until smooth.
For 3 Pitas:
- 3-5 oz bison patties
- 12 roma tomato slices
- 3/4 cup thinly sliced cucumber and red onion marinated in canola oil and white wine vinegar.
- 3 leaves red leaf lettuce
- 1/3 cup spiced yogurt
- 3 tbsp roasted red pepper hummus
Method
- To asssemble the pitas: Spread the inside of the pita with the hummus.
- Place the cooked bison patty inside the pita, add 1/3 of the cucumber/onion mix and a leaf of lettuce, and drizzle with the spiced yogurt mix.
