Stracotto Al Chianti - Braised Short Ribs

A delicious dish you can prepare ahead and relax with your company while it cooks.

Ingredients

  • 10 lbs bison short ribs 
  • 1 cup sliced fresh ginger 
  • 1 cup chopped green onions 
  • 1 cup chopped cilantro 
  • 1/8 cup black bean sauce 
  • 1/2 cup soya sauce 
  • 1/2 Litre red wine (Chianti) or Concha y Toro Syrah 
  • 1/2 cup fresh garlic (minced) 
  • 1 tbsp fresh ground pepper 
  • 2 cups fresh sliced tomatoes 
  • 1 1/2 tbsp olive oil 
  • 1 cup water 

Method

  1. Combine all ingredients in a bowl, except tomatoes, olive oil & water. Mix well, cover and marinate in refrigerator for 24 hours if possible. 
  2. Remove ribs from marinade, dry well and brown the ribs in a heavy skillet with olive oil. 
  3. Add marinade, tomatoes and water, cover and bake in oven @ 350F for about 3 1/2 hours. Check occasionally and add more wine to keep moist. 
  4. Serve ribs with some of the sauce with Spaghetti Olio e Aglio on the side (Spaghetti with Olive Oil, fresh garlic and chili) And of course a nice big glass of full-bodied Chianti Red Wine or Concha y Toro Syrah.
