Tatonka Soup
A very nice change in your menu.
Ingredients
- 1 medium onion, diced
- 1 leek, cut into rounds
- 4 ribs (stalks) celery, diced
- 2 medium carrots, diced
- ¼ cup (60 ml) green bell peppers, diced
- ¼ cup (60 ml) red bell peppers, diced
- ¼ cup (60 ml) oil
- 1 lb. (454 grams) ground bison
- 2 tsp. (10 ml) garlic, chopped
- ½ cup (125 ml) tomato paste
- 1 ½ qt. (1.69 L) bison stock
- 1 qt. (1.13 L) chicken stock
- 1 tsp. (5 ml) black pepper, coarse ground
- 1 bay leaf
- ½ tsp (2 ml) thyme leaves
- ½ tsp (2 ml) marjoram leaves
- 2 cups (500 ml) red potatoes, peeled & cubed
- ½ cup (125 ml) green beans, frozen
- ½ cup (125 ml) corn, frozen
Method
- Sauté first item in oil until onions are slightly browned.
- Add ground bison and cook it until meat is cooked to your satisfaction.
- Add garlic, tomato paste, bison stock and chicken stock and the spices. Bring to a boil.
- Add the potatoes and diced tomatoes and simmer for 25 minutes.
- Add the green beans and corn. Cook for another 15-20 minutes.
