Triple Bean Bison Chili

Chili - real cowboy like.

Ingredients

  • 1 lb (450 g) ground bison 
  • 1 each 16 oz (500 ml) can kidney beans, garbanzo beans (drained), pork ‘n beans 
  • 1 jar chunky spaghetti sauce 
  • 1 cup (250 ml) hot pepper rings 
  • ½ onion, chopped 
  • 1 stalk celery, chopped 
  • 1 clove garlic, minced 
  • ¼ cup (60 ml) chili powder 
  • 1 tsp (5 ml) dried oregano leaves 
  • 1 (5 ml) ground cumin 

Method

  1. Brown bison meat in a skillet over medium heat. 
  2. Save drippings and sauté onion, celery, and garlic until onion is clear. 
  3. Take sautéed vegetables and hot pepper rings and put in a blender. Liquefy. 
  4. Pour in a 6 quart pot along with the meat and add remaining ingredients except the 3 cans of beans. 
  5. Bring to a boil and reduce heat and cover. Simmer 1 hour stirring occasionally. Stir in beans. 
  6. Heat to boiling and reduce heat. Simmer uncovered until desired consistency, about 20 minutes. Serves 4-6
