Triple Bean Bison Chili
Chili - real cowboy like.
Ingredients
- 1 lb (450 g) ground bison
- 1 each 16 oz (500 ml) can kidney beans, garbanzo beans (drained), pork ‘n beans
- 1 jar chunky spaghetti sauce
- 1 cup (250 ml) hot pepper rings
- ½ onion, chopped
- 1 stalk celery, chopped
- 1 clove garlic, minced
- ¼ cup (60 ml) chili powder
- 1 tsp (5 ml) dried oregano leaves
- 1 (5 ml) ground cumin
Method
- Brown bison meat in a skillet over medium heat.
- Save drippings and sauté onion, celery, and garlic until onion is clear.
- Take sautéed vegetables and hot pepper rings and put in a blender. Liquefy.
- Pour in a 6 quart pot along with the meat and add remaining ingredients except the 3 cans of beans.
- Bring to a boil and reduce heat and cover. Simmer 1 hour stirring occasionally. Stir in beans.
- Heat to boiling and reduce heat. Simmer uncovered until desired consistency, about 20 minutes. Serves 4-6
